There are Ability Stars you must first collect in The Sapphire Sanctuary garden to unlock the abilities to get Gold and then eventually Diamond items & creatures.
The Ability Star for Gold items & creatures is found in a land area you should have been able to unlock by the time you reach Garden Level 14. The one for Diamond is on land that unlocks at Garden Level 31.
Once you've earned these abilities, it all comes down to luck! There are small chances of earning Gold versions of items or creatures with every merge or loot drop. Similarly with Diamond, but those are extraordinarily rare, and if you find a Diamond item or creature, you should count yourself very lucky!
Are there ways to increase your odds? There may be a special way to merge to give a very slight bump to your chances...
Also, you can find Midas Eggs and Giant Midas Eggs which are guaranteed to drop at least Gold creatures.
